Oh yes, pumpkin season is here - and with that, comes a lot more than pumpkin spice lattes. Yes, now is the wonderful time we call squash season! Butternut, acorn, delicata, spaghetti, kabocha and hubbard are all on store shelves, along with sugar pumpkins, which are sweeter and firmer than the large carving kind. Squash are low in calories, high in nutrients, and serve for much more than pie.

Why Squash Matters

  • Vitamin A Powerhouse: Just one cup of butternut gives you 83% of your daily vitamin A.

  • Fiber Boost: Canned pumpkin has about 7 grams of fiber per cup.

  • Heart-Friendly Potassium: One cup of cooked pumpkin has over 500 mg of potassium.

  • Low Calorie: Most varieties only have about 45 to 90 calories per cup.

  • Bonus Vitamin C: One cup covers about a third of your daily vitamin C needs.

Ways to Eat More Squash This Season

  • Roast It: Add a little olive oil to help your body absorb all those great nutrients.

  • Skip the Peeler: Acorn and delicata skins are edible and tasty too.

  • Swap Your Pasta: Spaghetti squash serves as a great substitute for noodles.

  • Blend It In: Add the purée to soups, chili or oatmeal.

  • Save the Seeds: Roast them for a crunchy, on-the-go snack.
